Salt & The Cellar at ette hotel featuring Wagyu short rib and Dynamite Lobster in an upscale Orlando dining room

At ette hotel, luxury has always been more than polished marble and soft lighting. It is found in the details, in the quiet precision of service, and now, in a refreshed dinner menu at Salt & The Cellar by Michelin-starred Chef Akira Back that brings bold flavor and disciplined technique to the table.

Located just minutes from Walt Disney World® Resort, ette hotel has built its reputation as a refined Orlando escape, earning a MICHELIN Key distinction in both 2024 and 2025. In a destination known for motion, crowds, and spectacle, ette offers something calmer and more intentional. Salt & The Cellar continues that philosophy with new dishes that feel elegant without losing their appetite for adventure.

The latest additions to the menu include standout dishes such as 48-Hour Wagyu Short Rib, Galbi Lamb Chops, and Dynamite Lobster, each bringing its own rhythm to the dining experience. The Dynamite Lobster begins the meal with a broiled half lobster finished with signature dynamite sauce, serrano peppers, and charred lemon. It is bright, rich, and just fiery enough to wake up the room.

For guests looking for something deeper and more indulgent, the 48-Hour Wagyu Short Rib is slow-braised until tender, served with pearl onions and a savory braising jus. It is the kind of dish that respects time, patience, and craft. The Galbi Lamb Chops bring another layer of flavor, pairing tender lamb with asparagus, blistered tomatoes, a crisp potato garnish, and a rich jus that ties the plate together with quiet confidence.

The new menu also makes room for lighter, seasonal offerings. The Gem Lettuce Salad takes a fresh turn with champagne vinaigrette, red golden beets, red quinoa, grape tomatoes, and avocado. A classic Nicoise Salad arrives with mixed greens, grape tomatoes, fingerling potatoes, green beans, boiled eggs, Nicoise olives, and seared tuna. Charred asparagus and green beans with butter soy emulsion and crispy shallots round out the new selections with a savory snap.

“At ette hotel, every detail is intentionally curated to create extraordinary guest experiences, and our culinary program is no exception,” said Alex Ekbatani, President and Owner of the ette hotel. “The new menu offerings embody the precision and quality that define Salt & The Cellar while emphasizing our dedication to pushing the boundaries of culinary excellence.”

That statement feels true to the spirit of the property. ette, whose name reflects earthy, true, timeless, and elegant, has created a boutique luxury experience that balances serenity with sophistication. From Le Labo bath products and Italian Frette linens to Nespresso coffee, Compartes chocolates, a lavish spa, resort-style pool, advanced fitness center, and rooftop lounge views of Walt Disney World® Resort fireworks, the hotel is designed as an oasis tucked near the gates of one of the world’s busiest destinations.

With these new dinner offerings, Salt & The Cellar continues to sharpen its identity as one of Orlando’s most thoughtful culinary destinations. This is food with polish, yes, but also with pulse. The new menu is now available during dinner service at Salt & The Cellar.
