Pensacola’s dining scene is preparing for a little culinary theater as The Well Supper Club welcomes Big Jerk Soda Co. for an intimate, one-night-only collaboration on Sunday, June 14.
Led by Chef Rusty Strain, head chef of Perennial Hospitality Group, the evening will pair five inventive courses with three craft cocktails. The result promises to be more than dinner. It is a flavor-driven conversation between Southern comfort, Caribbean-inspired creativity and modern cocktail culture.
Doors open at 5:30 p.m., with dinner beginning at 6 p.m. Tickets are $100 per person.
Five Courses Built to Surprise
The evening begins with Killa Cam Cola-braised Southern collards served alongside smoked Gouda grit cake and glazed pork belly. Crystal hot sauce and honey add a sweet, fiery finish that sets the tone for the night.
Next comes a bright lemonade niçoise featuring diced spring greens, saffron cream lemonade dressing, honey-lemon marinated egg, capers, pickled onion, artichokes and cubed tuna.
The third course shifts into deeper savory territory with a crispy duck empanada. Confit duck is paired with peach tea jalapeño spread and pickled salad, creating a plate that balances richness, sweetness and heat.
For the main course, guests will enjoy sorrel and vino-braised beef with truffle Parmesan mashed potatoes, bone marrow, a sorrel drink demi-glace, crispy potato, palm and shallot.
Dinner concludes with pineapple upside-down cake, a familiar dessert that feels perfectly suited to the evening’s playful, tropical current.

A Collaboration Centered on Flavor
“Supper Club at The Well is all about creating experiences guests can’t find anywhere else,” said Jensen Meharg, general manager of Perennial Hospitality Group.
According to Meharg, the collaboration with Big Jerk Soda Co. gave the culinary team room to experiment with bold flavors while creating a menu that feels elevated, unexpected and memorable from beginning to end.
The Well is part of Perennial Hospitality Group, which also operates Perfect Plain Brewing Co., Garden & Grain and Perennial patio bar in downtown Pensacola. Together, the four concepts have helped build a lively hospitality corridor where beer, cocktails, food and community share the same table.
Additional Supper Club dinners are scheduled for August 9, October 11 and December 6. A discounted ticket bundle is also available for guests interested in attending the remaining 2026 dinners.
With limited seating, this collaboration may be one of those evenings that disappears quickly. Pensacola diners should arrive hungry, curious and ready to let each course tell its own story.
