
CELEBRATING AFRICAN CULINARY IDENTITY IN DAKHLA (MOROCCO)
The continental selections for the BOCUSE D’OR and the Pastry World Cup will take place on September 9th and 10th, 2022.
The Pastry World Cup and the Bocuse d’Or will be held in Morocco on the 9th and 10th of September. The two international culinary competitions will be held in Dakhla, a coastal town on the Atlantic Ocean that faces sub-Saharan Africa.
The Bocuse d’Or Africa and Pastry World Cup African selection are opportunities for African chefs to showcase their culinary skills. The promotion of African gastronomy goes hand in hand with the promotion of African chefs. It is also an opportunity to introduce new flavours to the World Finals. The competition’s president, Kamal Rahal, warns.

It will be a first time for Mauritius teams to compete in these competitions, joining the Pastry World Cup and the Bocuse d’Or families.
On Friday 9th September, the Bocuse d’Or opens these two days of competition. Sirha Lyon will select two teams from the 7 participating teams for the Bocuse d’Or Grand Final in January 2023. During the competition, teams will be given 5 hours and 35 minutes to come up with two themes, one on a plate and one on a platter.
It will be up to the candidates and their commis to create a plate based on seam bream, which can include prawns, lobsters, or oysters. In order to sublimate these products, chefs must combine vegetables and meat to come up with a recipe. As part of the platter theme, candidates will prepare a platter featuring lamb saddle, accompanied by three side dishes, of which one must be emblematic of the nation that the team represents.

On Saturday 10th September at 6:30 am, selections for the Pastry World Cup will take place. Each of the eight competing teams, comprised of two candidates and a coach, will compete for one of three spots in the Sirha Lyon fairtrade Grand Final 2023.
The restaurant dessert was introduced at the 2021 Grand Final and was included in the tasting rounds of the continental selections this year. A jury of renowned pastry chefs and cooks will judge the presentation, composition, and service of these seven desserts.
The candidates will also have to make twelve frozen lollipops (in the shape, colour and composition of their choice), two frozen fruit entremets and finally two 145 cm artistic pieces (one in sugar and one in chocolate).
